There's even one person told me that i2p-bote never sends out a single mail. So I assume this is a result of poor connectivity. 2. Mail sent, but never went through. The sender sees the mail moved from unsent to sent, but the progress bar stuck at 0% or 80% forever, and the recipient never sees the message. 0% may be a connectivity issue, but 80%?

GNATS uses its address in its outgoing messages' "Reply-To" header. The "From" header of GNATS' messages contains the e-mail address of a message's originator. Note that your e-mail client will (should) ignore the "From" header completely when honoring "Reply-To": this means that when that "From" address is not one of the addresses listed above, you should make sure to explicitly add it to the addressee list of your message.
