Of course I don't log your public keys, or indeed anything else that your client tells my server, but what I really think you should do is give your client clear instructions on which servers to offer which public keys to. In general, you should mentally classify the servers you connect to into 'OK to be correlated to each other' and 'must stay anonymous' categories, and disallow public key authentication (or use per-server unique keys) for those in the second category.
